Lion's Mane with Fresh Vegetables
A healthy and colorful dish that combines golden lion's mane with fresh, crunchy vegetables. Ideal for a light and nutritious meal.

- 200g fresh lion's mane
- 100g of green peas
- 100g of green beans
- 2 medium tomatoes, cut into wedges
- 2 tablespoons of extra virgin olive oil
- 1 clove of minced garlic
- Sea salt
- Freshly ground black pepper
- A few fresh parsley leaves for garnish

Preparación
- 1 Clean the lion's mane and shred it into medium-sized pieces with your hands.
- 2 Wash and cut the green beans into thin strips.
- 3 Heat the olive oil in a large skillet over medium heat.
- 4 Sauté the chopped garlic for 1 minute to flavor the oil.
- 5 Add the lion's mane and cook for 6-8 minutes until lightly browned.
- 6 Add the peas and green beans, sautéing for 3-4 minutes.
- 7 Add the tomatoes and cook for 2 more minutes, keeping their freshness.
- 8 Season with salt and pepper to taste and mix all the ingredients well.
- 9 Remove from heat and garnish with fresh parsley before serving.
