Vegan Lion's Mane Tacos

Ingredientes

  • 300g fresh lion's mane
  • 2 tablespoons of olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 2 cloves of garlic, minced
  • 1 julienned red onion
  • Small corn tortillas
  • Chopped fresh cilantro
  • Lime slices to accompany
  • Salt and pepper to taste

Preparación

  1. 1 Crumble the lion's mane into thick strips with your hands.
  2. 2 Heat the olive oil in a large skillet over medium-high heat.
  3. 3 Add the onion and sauté for 3 minutes until soft.
  4. 4 Add the garlic and cook for 1 more minute.
  5. 5 Add the lion's mane, paprika, cumin, salt and pepper.
  6. 6 Sauté for 8-10 minutes until golden brown and slightly crispy around the edges.
  7. 7 Heat the tortillas in a clean skillet.
  8. 8 Fill with lion's mane, garnish with fresh cilantro, and serve with lime wedges.
