Scrambled Eggs with Lion's Mane

- 4 free-range eggs
- 2 tablespoons of extra virgin olive oil
- 1 whole garlic clove
- Chopped fresh chives
- Sea salt
- Freshly ground black pepper
- Toasted bread to accompany

Preparación
- 1 Crumble the lion's mane into medium-sized pieces.
- 2 Heat the oil in a non-stick skillet over medium heat.
- 3 Fry the whole garlic for 1 minute and remove it.
- 4 Add the lion's mane and cook for 6-8 minutes until browned.
- 5 Beat the eggs and season with salt and pepper.
- 6 Reduce the heat, pour the eggs over the mushrooms and stir gently.
- 7 Cook for 2-3 minutes until smooth.
- 8 Remove from heat and sprinkle with chives.
- 9 Serve with warm toasted bread.
