Lion's Mane and Vegetable Ramen
A comforting bowl of ramen with marinated lion's mane and umami broth. A perfect fusion of Japanese tradition and local produce.
Ingredientes
- 200g fresh lion's mane, sliced
- 150g ramen noodles
- 1 liter of vegetable or chicken broth
- 2 tablespoons of soy sauce
- 1 tablespoon white miso
- 1 marinated boiled egg (optional)
- Sweet corn
- Chopped chives
- Toasted sesame oil
- Salt to taste

Preparación
- 1 Sauté the lion's mane in a pan with a little sesame oil for 5-6 minutes until golden brown.
- 2 In a pot, heat the broth and add the soy sauce and miso, stirring until dissolved.
- 3 Cook ramen noodles according to package instructions.
- 4 Place the noodles in a large bowl.
- 5 Add the sautéed lion's mane, sweetcorn, and marinated egg.
- 6 Pour the hot broth over the top and garnish with chives.
